Recipe Ingredients:

You’ll need the following ingredients to make these easy cheesy potatoes:

  • Colby Jack cheese
  • Russet potatoes
  • Avocado oil- You can use vegetable or olive oil instead.
  • Lawry’s Seasoned Salt
  • Ranch dressing

INGREDIENT NOTES:

  • Russet Potatoes: These work best for getting crispy edges while staying fluffy inside. Just place potatoes in bite-sized pieces for best results.
  • Lawry’s Seasoned Salt: This is key to the flavor, don’t skip it! You could also use garlic powder, onion powder, and black pepper as alternatives.
  • Ranch Dressing: Use your favorite brand like Hidden Valley Ranch, or make your own creamy ranch sauce. A ranch seasoning packet or ranch mix also works great!

How to make Cheesy Ranch Potatoes step-by-step:

*Check out the quick visual guides below. For full instructions and ingredients, see the printable recipe card at the end.

Step 1: Preheat oven to 400°F. Grease a 9×13-inch baking dish or prepared pan.

Step 2: Scrub and cut the potatoes into bite-sized pieces.

Step 3: In a large mixing bowl, toss the potatoes with avocado oil and Lawry’s Seasoned Salt until evenly coated.

Step 4: Spread the potatoes in the prepared dish and bake for 30-35 minutes (baking time), stirring once halfway through.

Step 5: Remove from the oven, drizzle ranch dressing over the top of the potatoes, and sprinkle with Colby Jack cheese. Return to the oven for 10 minutes, or until the cheese is melted and bubbly. Serve with sour cream on the side.

Pro Tip:

Don’t skip stirring the potatoes halfway through baking, this helps them get crispy on all sides. Also, make sure the potatoes are in a single layer for the best results! The last 15-20 minutes are crucial for getting that perfect golden color.

Storage and Reheating:

Storage: Store leftovers in the refrigerator in an airtight container for up to 4 days.

Reheating: Reheat in a 350°F oven for 10-15 minutes to keep them crispy, or microwave for a quicker option. Add a bit of water if they seem dry.

Freezing: We don’t recommended freezing. Potatoes don’t freeze well after being cooked this way, even in a freezer-safe container with plastic wrap, so just make fresh.

Additions & Substitutions:

ADDITIONS:

  • Toppings: Add bacon bits, green onions, or fresh parsley after baking.
  • Extra Cheese: Use more cheese! Sharp cheddar, cheddar cheese, or try a cheese blend.
  • Spice: Add some cayenne pepper or red pepper flakes for heat.
  • Creamy: Mix in a cream cheese mixture for extra richness.

SUBSTITUTIONS:

  • Potatoes: Yukon gold or red potatoes work too. You could even make these in a large pot on the stovetop or a slow cooker with some adjustments.
  • Cheese: Cheddar, mozzarella, or Mexican blend all work great in this recipe.
  • Seasoning: Use garlic salt, homemade ranch seasoning mix, or your favorite seasoning blend instead of Lawry’s.
  • Oil: Use melted butter instead of oil for extra richness.

FAQs about these Hidden Valley Ranch Potatoes:

Can I use other types of potatoes?

Yes! Yukon gold or red potatoes work great too. Just keep the pieces similar in size so they cook evenly.

Why aren’t my potatoes crispy?

Make sure they’re in a single layer and not crowded in the pan. Also, don’t add the ranch until after they’ve baked and gotten crispy.

Can I make these ahead?

You can prep and cut the potatoes ahead, but they’re best baked fresh. The texture won’t be as crispy if made too far in advance.

What Can I Serve with these cheesy potatoes?

These are great with grilled chicken, steak, burgers, or any main dish. They’re also great for potlucks and barbecues and pair well with other side dishes!
