  • Chicken Breast: One large breast is perfect, but you can also use leftover cooked chicken to save time.
  • Chili Beans: Don’t drain this! The liquid adds flavor to the soup.
  • Diced Tomatoes with Green Chilies: Rotel works great for this.

Step 1: Place the chicken breast in a medium pot and cover with about 3 cups of water. Bring to a boil, then reduce the heat and simmer until cooked through, about 15 minutes.

Step 2: Remove the chicken and shred it with two forks. Do not drain the liquid!

Step 3: Return the shredded chicken to the pot. Add chili beans, diced tomatoes, corn, and taco seasoning.

  • 1 (10 oz) can Rotel Diced tomatoes and green chilies undrained
  • 1 (15 oz) can whole kernel corn drained
  • 1 (1 oz) packet taco seasoning mix
